Preheat the oven to 350°F. Boil green beans for 6-7 minutes, then drain and rinse with cold water. Sauté onions and mushrooms in olive oil for about 5 minutes until softened. Add garlic, salt, pepper, nutmeg, and parmesan cheese.
Combine chicken broth and almond milk, and thicken with a mixture of arrowroot powder and chicken broth. Pour a portion of the sauce into a baking dish, add green beans, and top with the remaining sauce. Bake for 40 minutes.
While baking, fry shallots in olive oil until golden brown and drain on paper towels. Once the casserole is done, garnish with crispy shallots and more parmesan cheese. Enjoy!
