– Vegetables – Beef – Noodles – Tomato sauce – Greek yogurt
In a Dutch oven or large pot, heat oil. Add onion and peppers, sauté until soft. Add ground beef, cook until fully cooked, drain excess fat if needed.
Stir in dry pasta, beef broth, water, tomato sauce, and spices. Cover and cook until almost all liquid is absorbed, stirring occasionally.
Stir in Greek yogurt and cheddar cheese, then add spinach.
Allow spinach to wilt, then stir into noodles. Serve in bowls and enjoy.
