Preheat the oven to 350F and prepare a baking sheet with parchment paper. Take a sheet of puff pastry and position a brie wheel in the center. In a separate bowl, combine chopped bacon, pecans, dates, rosemary, and honey.
Spread this mixture on top of the brie, then fold the sides of the puff pastry over the cheese, ensuring the entire wheel is covered. Whisk one egg in a small bowl and use a pastry brush to coat the puff pastry with it.
Bake for 30-35 minutes until golden brown, and let it stand for 15 minutes before serving.
