Ingredients
– Spaghetti – Shrimp – Cajun seasoning – Diced tomatoes – Spinach
Prepare spaghetti according to package instructions, drain, and keep warm.
In a large bowl, mix shrimp with half of Cajun seasoning, salt, and pepper; heat oil in a large Dutch oven.
Cook shrimp, then remove from heat and set aside.
Add butter to the same pan, then garlic, cook for 30 seconds, add diced tomatoes and milk.
Whisk 1/4 cup of milk mixture with flour to make a roux, then add back to pot and whisk until combined.
Stir in Parmesan cheese and remaining Cajun seasoning, simmer until thickened.
Add shrimp and spaghetti to sauce, mix well; add baby spinach and mix until wilted.
Serve topped with parsley and extra Parmesan.
