– Salmon – Olive oil – Salt & Pepper – Cherry tomatoes – Olives – Artichoke hearts – Garlic – Lemon juice – Olive oil – Oregano – Salt & pepper – Feta – Dill
Preheat oven to 425F and line a baking sheet with parchment paper. Place 4 pieces of foil (12"x12" each) on a flat surface. Lay salmon on the foils (skin side down if applicable) and evenly distribute olive oil, salt, and pepper.
In a bowl, mix sliced tomatoes, olives, artichoke hearts, and garlic. Add lemon juice, olive oil, oregano, salt, and pepper. Divide this mixture among the foil packets on top of the salmon.
Wrap the foil packets, ensuring coverage. Bake for 18-20 minutes until salmon flakes. Unwrap and top with crumbled feta and dill. Serve immediately.
