These Apple Pie Protein Balls are an easy no-bake snack made with dried apples, oats, vanilla protein powder, almond butter, and warm apple pie spices. They're naturally sweetened, packed with protein, and perfect for meal prep, healthy snacking, or post-workout fuel.

Ingredients
  

  • 1 cup dried apples
  • 1 cup rolled oats
  • 2 scoops vanilla protein powder ½ cup
  • 1 cup natural nut butter I like almond
  • 2 tablespoon chia seeds
  • 1 teaspoon apple pie spice
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • water

Method
 

  1. In a food processor, blend the dried apples and oats for about 2 minutes or until fine powder forms.
  2. Add in protein powder and pulse, then add in nut butter, chia seeds, apple pie spice, cinnamon, and salt. Blend until well combined.
  3. If mixture has not come together and can't be held together when pinched (this will depend on your protein powder), add water. Start with 2 tablespoon and add from there, blending in between, until mixture easily rolls into balls.
  4. Roll into 20 balls, then top with flakey sea salt in desired. Refrigerate (or freeze!) at least 1 hour before eating.

Notes

Let the food processor do the work. Blend the dried apples and oats until they're a truly fine powder before adding anything else — any large apple pieces left behind will make the dough harder to roll and can leave chunks that won't stick together.
Add water gradually. Every protein powder absorbs liquid differently, so start with 2 tablespoons of water and blend in between additions. You want the dough to hold together when pinched, not turn wet or sticky.
