Baked brownie oatmeal is a delicious and healthy treat that combines rolled oats, cocoa powder, chocolate chips, maple syrup, and coconut oil. It's great as an afternoon snack with a cup of tea or as a guilt-free dessert after dinner.

Ingredients
  

  • 2 cups rolled oats
  • 1/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil
  • 1 1/2 cup almond milk
  • 1 tsp vanilla
  • 1 cup chocolate chips leave some for sprinkling on top before baking
  • toppings: peanut butter whipped cream, maple syrup, nuts.

Method
 

  1. Preheat oven to 350F and grease an 8x8 pan.
  2. In a large bowl, mix together oats, cocoa powder, baking powder, and salt.
  3. In a medium bowl, whisk together eggs, almond milk, maple syrup, coconut oil, and vanilla.
  4. Pour liquid into dry ingredients and stir until well combined.
  5. Add in chocolate chips, stir, then pour into greased baking dish, sprinkle extra chocolate chips on top.
  6. Bake for 45-50 minutes or until looks set. Let cool for 10 minutes before serving.
  7. Top with optional toppings and enjoy!

Notes

  • Make sure to use rolled oats — no need to blend them. Just use them as-is! They'll soften as the oatmeal bakes and give you the best texture. No need to do any extra prep here.
  • Use pure vanilla extract, not imitation. This is a small but important one! Pure vanilla adds so much more depth and aroma to the finished oatmeal, and since the ingredient list is simple, every ingredient counts.
  • Bake for 45-50 minutes and let it cool for 10 minutes before serving. It might look a little soft right out of the oven — that's totally fine! Give it those 10 minutes to set up and it will firm right up into the most perfect brownie-like squares.
