Method
- Preheat oven to 350F and grease an 8x8 pan.
- In a large bowl, mix together oats, cocoa powder, baking powder, and salt.
- In a medium bowl, whisk together eggs, almond milk, maple syrup, coconut oil, and vanilla.
- Pour liquid into dry ingredients and stir until well combined.
- Add in chocolate chips, stir, then pour into greased baking dish, sprinkle extra chocolate chips on top.
- Bake for 45-50 minutes or until looks set. Let cool for 10 minutes before serving.
- Top with optional toppings and enjoy!

Notes
- Make sure to use rolled oats — no need to blend them. Just use them as-is! They'll soften as the oatmeal bakes and give you the best texture. No need to do any extra prep here.
- Use pure vanilla extract, not imitation. This is a small but important one! Pure vanilla adds so much more depth and aroma to the finished oatmeal, and since the ingredient list is simple, every ingredient counts.
- Bake for 45-50 minutes and let it cool for 10 minutes before serving. It might look a little soft right out of the oven — that's totally fine! Give it those 10 minutes to set up and it will firm right up into the most perfect brownie-like squares.
