Heat a sauce pot over medium-high heat and add mashed bananas, cinnamon, maple syrup, and water. Bring to a bubble and reduce heat to medium. Let simmer, stirring occasionally, for 5 minutes. Turn off heat and mix in vanilla.
In a large bowl, mix together oats, protein powder, chia seeds, and salt.
Pour in the banana mixture, then add the almond milk and stir until well combined.
Refrigerate overnight or at least 4 hours, stirring once throughout if desired.
Before serving, stir well and add more almond milk as needed to desired consistency. I like to mix in about 1/4 cup before serving. Top with granola, fruit, and nut butter.
