Method
- Heat a large saucepan and add olive oil. Once hot, add onion, carrots, and celery. Let cook for about 5 minutes until veggies start to soften. Add garlic and cook another minute.
- Add in turkey sausage and cook until no longer pink, then stir in the spices.
- Add beans, diced tomatoes and tomato sauce. Stir until all combined, then add vegetable broth. Bring to a boil and let simmer over medium heat for 15-20 minutes.
- Add in parsley, pasta, and parmesan cheese and let simmer another 12 minutes. Turn off heat and let sit for ten minutes before serving
- Serve with parmesan cheese and pesto
