Ingredients
  

  • 2 tbsp olive oil
  • 1/2 large white onion diced
  • 3 carrots diced
  • 3 ribs celery diced
  • 3 cloves garlic minced
  • 1 lb turkey sausage
  • 1 tsp each dried oregano basil, parsley, salt, and pepper
  • 14 oz can cannellini beans
  • 14 oz can dark red kidney beans
  • 14 oz can diced tomatoes
  • 15 oz can tomato sauce
  • 8 cups vegetable broth
  • 1/4 cup fresh parsley
  • 6 oz ditalini pasta noodles
  • 1/4 cup grated parmesan cheese
  • toppings: more parmesan cheese and pesto

Method
 

  1. Heat a large saucepan and add olive oil. Once hot, add onion, carrots, and celery. Let cook for about 5 minutes until veggies start to soften. Add garlic and cook another minute.
  2. Add in turkey sausage and cook until no longer pink, then stir in the spices.
  3. Add beans, diced tomatoes and tomato sauce. Stir until all combined, then add vegetable broth. Bring to a boil and let simmer over medium heat for 15-20 minutes.
  4. Add in parsley, pasta, and parmesan cheese and let simmer another 12 minutes. Turn off heat and let sit for ten minutes before serving
  5. Serve with parmesan cheese and pesto
