Birthday Cake Cookies are an easy way to enjoy classic birthday cake flavors in a different way! Made with cookie ingredients, white chocolate chips, and rainbow sprinkles, these treats can be enjoyed as an everyday dessert, or as part of a birthday celebration.

Ingredients
  

  • 3/4 cup butter softened
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2 1/2 cups all purpose flour
  • 2 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1.5 cups white chocolate chips
  • 3/4 cup rainbow sprinkles

Method
 

  1. In a large mixing bowl or stand mixer, beat together butter and sugars until creamy. Add in eggs and extracts and continue to beat. Set aside.
  2. In a medium sized bowl, whisk together flour, cornstarch, baking soda, baking powder, and salt.
  3. Add dry ingredients to wet ingredients, mixing well until all combined.
  4. Fold in white chocolate chips and sprinkles.
  5. Refrigerate dough for at least 60 minutes.
  6. When ready to bake, preheat oven to 350F and line baking sheets with parchment paper.
  7. Scoop 3 tbsp of dough using a cookie scoop onto cookie tray. Bake for 12-14 minutes or until just slightly golden on the bottom edge. Let cool completely before serving.
