Creamy Peanut Butter Overnight Oats are the perfect easy prep-ahead breakfast recipe. Throw them in a jar and take them on the go! Made vegan, gluten-free, and dairy-free, and requiring only 5 minutes of prep time.

Ingredients
  

  • 1 cup rolled oats
  • 1 1/2 tbsp. chia seeds
  • 1 cup almond milk
  • 2 tbsp. maple syrup
  • 3 tbsp. natural peanut butter
  • 1 Pinch sea salt.
  • *add splash of almond milk in morning for creamier oats

Method
 

  1. In a bowl, mix oats, almond milk, chia seeds, maple syrup, and salt.
  2. With a fork, lightly whisk in the peanut butter. I like to leave some peanut butter swirls not fully blended.
  3. Pour into mason jars or containers to store.
  4. Cover and place in fridge for at least 4 hours. My recommendation is to leave them in for 8-10 hours
  5. Refresh with splash of almond milk before eating.
Toppings:
  1. Add banana, berries, chia seeds, coconut flakes, or a drizzle of nut butter for added yum

Notes

  • Don't Fully Blend In the Peanut Butter: Use a fork to lightly whisk it in rather than stirring it all the way through. Leaving beautiful swirls and pockets of peanut butter throughout the oats is honestly the best part of this whole recipe!
  • Give Them a Full 8-10 Hours: While 4 hours technically works, letting the oats soak overnight is where the magic really happens. The oats and chia seeds absorb all the liquid and transform into a thick, creamy texture that a few hours just can't achieve.
  • Add a Splash of Almond Milk in the Morning: The oats will have absorbed a lot of liquid overnight, so give them a splash of almond milk and a good stir before eating. This loosens everything up and gets them back to that perfectly creamy consistency.
