Ingredients
  

  • 1/2 cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 pint sour cream
  • 1 tsp vanilla
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Cinnamon Sugar layer:
  • 3/4 cup sugar
  • 2 tsp cinnamon
Optional glaze:
  • 1 cup powdered sugar
  • 1-2 tbsp almond milk

Method
 

  1. Preheat oven to 350F and grease 9x9 baking dish. I also add a layer of parchment on the bottom.
  2. In a large bowl, using a hand mixer, beat together butter and sugar until well combined. Add in eggs and blend until creamy. Then mix in sour cream and vanilla.
  3. In a small bowl, mix together flour, baking powder, baking soda, and salt.
  4. Slowly add dry ingredients to wet using mixer until all combined. Batter should be fluffy.
  5. Add half the batter to baking dish and spread evenly into bottom. I use an icing knife to make sure it spreads evenly because it will be thick.
  6. In a small bowl, mix together cinnamon and sugar. Sprinkle half of the mixture evenly over the cake batter.
  7. Repeat process with adding remaining cake batter to dish, spreading out with icing knife, and topping with more cinnamon sugar.
  8. Bake for 28-32 minutes or until toothpick inserted in center comes out clean.
  9. While cake cools, make glaze if you are choosing to add. Once cool, drizzle all over cake.
  10. Cut and serve! Enjoy!
