Ingredients
  

  • 3 cups old fashioned oats
  • 1/4 tsp. salt
  • 2 Tbsp. chia seeds
  • 1 tsp. cinnamon
  • 1/2 cup almond butter
  • 1/3 cup honey
  • 1/4 cup melted coconut oil
  • 1 tsp. vanilla

Method
 

  1. Preheat oven to 325F. Line baking sheet with parchment paper.
  2. In a large bowl, mix together oats, salt, chia seeds, and cinnamon.
  3. In a small bowl, mix together almond butter, honey, coconut oil, and vanilla.
  4. Once fully combined, press onto lined parchment paper - spread into flat layer.
  5. Baked for 20-22 minutes or until golden brown.
  6. Let cool completely before breaking apart.
  7. Store in airtight container on the counter.

Notes

  • Press It Into a Flat, Even Layer: This is the secret to achieving those big, satisfying clusters! Before the pan goes into the oven, press the mixture firmly into a flat, even layer across the parchment paper. The more compact it is, the chunkier the pieces will be when you break it apart.
  • Let It Cool Completely Before Breaking Apart: As tempting as it is to dig in right away, the granola needs to fully cool to achieve that perfect crispy texture. If you break it apart while it's still warm, it won't cluster properly.
  • Add Mix-Ins After Baking: Fold in any add-ins like chocolate chips or dried fruit after the granola comes out of the oven, not before. Adding them pre-bake can cause chocolate to melt into a mess or dried fruit to burn.
