A healthy banana bread recipe that is easy to make and is moist, has no refined sugar, and can be easily made into muffins! This whole wheat banana bread is made with coconut oil and with chocolate chips!

Ingredients
  

  • 1 3/4 cups white whole wheat flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/3 cup mashed ripe bananas about 3 large bananas
  • 2 eggs whisked + room temperature
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup
  • 1 tsp. vanilla extract
  • 3/4 cup chocolate chips with more for topping

Method
 

  1. Preheat oven to 350F and prepare 9x5 loaf pan.
  2. In a small bowl, mix together flour, baking soda, salt and cinnamon. Set aside.
  3. In a large bowl, whisk mashed bananas and eggs until combined.
  4. Mix in oil, maple syrup, and vanilla.
  5. Add dry ingredients to wet and stir to combine.
  6. Add in any mix-ins - chocolate chips, nuts, etc.
  7. Pour into greased bread loaf pan.
  8. Bake for 40-50 minutes or until toothpick comes out clean.
  9. Enjoy!

Notes

  • The riper the banana, the better! You want them extra ripe — think brown and spotty. To ripen bananas faster, place them in a paper bag and close it tightly. They should be ready within a day and will make the bread naturally sweeter and more flavorful.
  • Use a potato masher to mash your bananas. It makes them perfectly smooth and mushy, which is exactly what you want for moist banana bread. A fork works in a pinch, but the masher is so much easier!
  • Bake for 40-50 minutes and always check with a toothpick. Ovens vary, so start checking around the 40-minute mark. When the toothpick inserted in the center comes out clean, you're good to go!
