Ingredients
  

  • 12 oz broccoli
  • 1/3 cup water
  • 2 tbsp avocado oil
  • 1/2 small onion diced
  • 2 tbsp fresh grated ginger
  • 5 cloves garlic minced
  • 1 lb flank steak sliced into strips
  • optional: rice to serve
  • sesame seeds
Sauce
  • 1/2 cup reduced sodium soy sauce
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 1 tbsp arrowroot powder or cornstarch

Method
 

  1. In a large saute pan or dutch oven, add broccoli and water. Let broccoli steam about 4 minutes until slightly tender but still crisp.
  2. Remove broccoli and set aside in a bowl.
  3. Prepare sauce ingredients now but whisking all together in a bowl.
  4. To the dutch oven, add oil over high heat. Once warm, add onions and cook 2-3 minutes until softened slightly.
  5. Add in grated ginger, garlic, and sliced steak. Cook for 2-3 minutes or until outside of steak is no longer pink (inside will still be pink).
  6. Add broccoli back to dutch oven, and then pour the sauce on top of everything.
  7. Mix everything up and let cook over high heat for 4-6 minutes or until sauce has thickened. It should be bubbling. Continue to stir occasionally. Turn off heat and serve!
  8. If desired, serve over rice with sesame seeds.

Notes

  • Steam the broccoli first, then set it aside. Add the broccoli and water to the pan, let it steam for about 4 minutes until it's slightly tender but still crisp, then remove it. It goes back in later — this two-step method ensures you don't end up with mushy broccoli!
  • Crank the heat to high once the sauce goes in. After adding the broccoli back and pouring the sauce over everything, cook over high heat for 4-6 minutes until it's bubbling and the sauce has thickened. Keep stirring occasionally to make sure nothing sticks.
  • Slice your flank steak into thin strips before cooking. This helps it cook quickly and evenly. You only need 2-3 minutes for the outside to sear up — the inside can still be a little pink when you add the sauce, as it'll finish cooking through.
