Healthy Berry Baked Oatmeal is perfect for busy mornings. Made with healthy ingredients, it can be made ahead as a meal prep option. Just warm, add toppings, and enjoy!

Ingredients
  

  • 2 cups old-fashioned oats
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/4 teaspoon salt
  • 1 3/4 cup almond milk room temp
  • 2 eggs room temp, important so coconut oil stays melted
  • 1/3 cup maple syrup
  • 2 tbsp coconut oil
  • 1 tsp. vanilla
  • 2 1/2 cups fresh or frozen berries I've used both

Method
 

  1. Preheat oven to 375F
  2. Prepare 9x9 baking dish with nonstick spray.
  3. Combine oats, cinnamon, baking powder, and salt in large bowl.
  4. In smaller bowl, whisk 2 eggs.
  5. Add in almond milk, maple syrup, coconut oil, and vanilla to eggs.
  6. Mix wet ingredients into dry. Pour into prepared dish.
  7. Add fruit on top (some will sink- that's ok!)
  8. Bake for 45-48 minutes or until golden.
  9. Top with peanut butter, maple syrup, more fruit, whipped cream, or any desired topping.
