These healthy chocolate chip scones are soft, tender, and lightly sweetened, making them a wholesome twist on a classic bakery favorite. Made with simple ingredients and studded with chocolate chips, they have a buttery texture without being overly rich, making them perfect for breakfast, brunch, or an afternoon snack.

Ingredients
  

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1 egg whisked.
  • 1 tsp vanilla
  • 1 cup dark chocolate I chopped up a bar

Method
 

  1. Preheat oven to 350F
  2. In a large bowl, mix almond flour, coconut flour, baking powder, and salt.
  3. Pour coconut oil into dry ingredients, followed by maple syrup, whisked egg, and vanilla. 
  4. Stir until dough like consistency.
  5. Fold in chocolate.
  6. Place dough on parchment lined baking sheet and form into round shape. Flatten slightly into a disk.
  7. Cut into 6 equal pieces and separate on baking sheet.
  8. Bake for 18-25 minutes or until slightly golden brown. Keep an eye on them after 15 minutes.
  9. Let cool before eating.
