Ingredients
  

  • 1 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 2/3 cup coconut sugar
  • 1/2 cup melted coconut oil
  • 1 tsp vanilla
  • 1/2 cup mini chocolate chips
  • 1/2 cup powdered sugar

Method
 

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a medium bowl, mix together flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, whisk together eggs, coconut sugar, coconut oil, and vanilla.
  4. Add dry ingredients to wet, and stir until all combined. Then add in chocolate chips.
  5. Chill dough for at least 30 minutes in fridge.
  6. Roll cookies into balls and then roll into powdered sugar.
  7. Place on baking sheet and bake for 12 minutes.
  8. When cooled, roll in more powdered sugar.
