Ingredients
  

  • 1.5 cups rolled oats
  • 1.5 cups almond flour
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup coconut sugar
  • 1/2 cup softened butter or coconut oil, softened
  • 1 egg
  • 2 tsp vanilla
  • 3/4 cup chocolate chips
  • 3/4 cup raisins

Method
 

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a small bowl, mix together oats, almond flour, cinnamon, baking soda, and salt.
  3. In a large bowl, cream together coconut sugar and butter. Whisk in egg. Then add vanilla.
  4. Add wet ingredients to dry and stir until very well combined.
  5. Add in chocolate chips and raisins.
  6. Roll into balls and flatten onto baking sheet. Bake for 11-13 minutes or until golden brown.
  7. Let cool completely before eating so they can set.
  8. Store on counter in airtight container or in fridge.
