This High Protein Granola is crunchy, lightly sweet, and made with wholesome ingredients that actually keep you full. It’s an easy, make-ahead recipe perfect for breakfast, snacking, or topping yogurt and smoothie bowls.

Ingredients
  

  • 3 cups rolled oats
  • 1.5 cups chopped pecans or preferred nut
  • ¼ cup vanilla protein powder
  • 2 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup maple syrup
  • ½ cup melted coconut oil
  • 2 egg whites
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 325F and line baking sheet with parchment paper.
  2. In a large bowl, mix together oats, pecans, protein powder, chia seeds, cinnamon, and salt.
  3. Pour in maple syrup, coconut oil, egg whites, and vanilla extract and mix until well combined.
  4. Pour onto prepared baking sheet and spread evenly across the tray, patting down slightly.
  5. Bake for 30 minutes or until just slightly golden around the edges. Let cool completely before serving, as this is how the large clusters will form.
  6. Store in airtight container at room temperature.
