These Cottage Cheese Pancakes are soft, fluffy, and packed with protein. Made with simple pantry ingredients and blended cottage cheese, they're an easy breakfast that's perfect with butter, maple syrup, or your favorite fruit.

Ingredients
  

  • 2 eggs
  • ½ cup cottage cheese
  • splash vanilla
  • ½ cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ teaspoon cinnamon
  • Butter - for cooking and eating

Method
 

  1. Using an immersion blender or large blender, blend eggs and cottage cheese until mostly smooth but without over-blending. Whisk in vanilla.
  2. Add in flour, baking powder, salt, and cinnamon. Mix until just combined.
  3. Heat a large skillet over medium heat and add 2 tablespoon butter. Add ¼ cup batter for each pancake.
  4. Cook each side about 3-4 minutes, the first few pancakes always take a little bit longer and time will decrease the hotter the pan gets. You want them to be a nice golden brown. Flip once golden brown and repeat on other side.
  5. Repeat until no batter remains. Top with butter and maple syrup.
