Ingredients
  

  • 1 2/3 cups all purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 1/3 cup mashed ripe bananas about 3 large bananas
  • 1/4 cup white miso paste
  • 2 eggs whisked
  • 1/2 cup melted coconut oil or other neutral oil
  • 1/2 cup maple syrup
  • 1 tsp. vanilla extract
Miso Maple Glaze
  • 1 cup powdered sugar
  • 2 tbsp maple syrup
  • 1/2 tbsp white miso paste

Method
 

  1. Preheat oven to 350F and prepare 9x5 loaf pan.
  2. In a small bowl, mix together flour, baking soda, salt and cinnamon. Set aside.
  3. In a large bowl, whisk mashed bananas, miso paste, and eggs until combined.
  4. Mix in oil, maple syrup, and vanilla.
  5. Add dry ingredients to wet and stir to combine.
  6. Pour into greased bread loaf pan.
  7. Bake for 40-45 minutes or until toothpick comes out clean.
  8. While cooling, whisk together glaze ingredients. Pour over cooled loaf. Slice and enjoy!
