Ingredients
  

Salad
  • 16 oz salad spring mix
  • 2 pears sliced
  • 2 cups chopped walnuts
  • 5 oz dried cranberries
  • 5 oz crumbled blue cheese
Dressing
  • 1/3 cup olive oil
  • 3 tbsp apple cider vinegar
  • 3 tbsp honey
  • 2 tbsp dijon mustard
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

  1. In a large salad bowl, add lettuce. Add sliced pears, chopped walnuts, dried cranberries, and crumbled blue cheese.
  2. Mix together all of the dressing ingredients in a glass measuring cup.
  3. Pour dressing overtop of salad and toss until well combined. Serve!

Notes

  • Add the dressing right before serving.  This keeps the pears from browning and greens the greens from wilting.
  • Make ahead and longer storage. Keep the dressing and salad separate and hold off on slicing the pears until you're ready to eat.
  • Mix well.  Whisk all ingredients (balsamic, honey, dijon, olive oil) together really well so it fully emulsifies and coats every bite.
