Ingredients
  

  • 3 large cooked chicken breasts *see note for cooking method
  • 1 cup celery diced small
  • 6 slices turkey bacon cooked
  • 5 green onions diced.
  • 3/4 cup greek yogurt
  • 1/4 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp parsley
  • 3 tbsp water

Method
 

  1. Shred chicken by blending in a food processor for 5-10 seconds. This gives the chicken the best texture. Alternatively, shred very finely by hand.
  2. Meanwhile, chop up celery, green onions, and bacon and add to a large bowl. Pour in shredded chicken and toss.
  3. In a small bowl, mix together greek yogurt, mayo, lemon juice and all spices. Then add water. Whisk until well combined.
  4. Add ranch into chicken mixture and stir until well combined. Enjoy!
  5. Serve with crackers, on bread, with veggies.

Notes

For the chicken, I like to bake at 400 for 22-24 minutes or until 160F internal.
