Ingredients
  

  • 3 cups rolled oats
  • 1 cup oat flour can make homemade by grinding oats in blender
  • 1/3 cup coconut flakes optional
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 egg
  • 1/2 cup nut butter
  • 1/4 cup coconut oil
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 3/4 cup chocolate chips

Method
 

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. In a large bowl, combine oats, oat flour, coconut, baking powder, salt, and cinnamon.
  3. In another bowl, whisk egg. Stir in nut butter, coconut oil, maple syrup, and vanilla.
  4. Add wet ingredients to dry and stir to combine. Stir in chocolate chips.
  5. Wet hands and roll into balls, flattening slightly onto baking sheet. The dough will be sticky, but if you wet your hands, it should be able to form cookie shapes.
  6. Add more chocolate chips on top if desired.
  7. Bake for 14-16 minutes or until fully baked.
