S'mores Banana Bread

This s’mores banana bread combines moist banana bread with all the classic flavors of a campfire s’more. Ripe bananas create a soft, tender loaf while chocolate chips, marshmallows, and graham crackers add layers of sweetness, crunch, and gooey texture throughout.

Ingredients
  

  • 3 ripe medium bananas about 1 1/3 cups mashed
  • 3 eggs
  • 1 tsp vanilla
  • 2 tbsp maple syrup
  • 2 3/4 cup almond flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips divided
  • 4 graham crackers crumbled (gf if necessary)
  • 1 cup mini marshmallows

Method
 

  1. Preheat oven to 350F and grease bread pan.
  2. In a large bowl, mash bananas. Whisk in three eggs, then add vanilla and maple syrup.
  3. In a small bowl, mix together almond flour, cinnamon, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and stir to combine. Add in half of the chocolate chips. You can add in marshmallows inside, but they dissolve. I prefer just adding them on top.
  5. Pour into greased bread pan, adding rest of chocolate chips, graham crackers, and marshmallows on top.
  6. Bake for 55-60 minutes or until toothpick inserted comes out clean.
  7. Let cool before serving.
