Ingredients
  

  • 2 tablespoon avocado oil
  • ½ large yellow onion diced
  • 1 green pepper diced
  • 5 cups chopped sweet potatoes
  • 3 cloves garlic
  • 1 lb turkey sausage
  • 10 eggs
  • ½ cup milk nut milk works too
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup shredded mozzarella cheese

Method
 

  1. Preheat oven to 350F.
  2. Prepare your veggies by chopping them all up and grease a 9x13 casserole dish.
  3. In a dutch oven or large saucepan, add avocado oil.
  4. Once hot, add onion, green pepper, and sweet potato and cook for 8-9 minutes or until softening.
  5. Throw in garlic for the last minute or two and saute. Take out veggies and lay into bottom of 9x13 pan.
  6. Add turkey sausage to same dutch oven and saute until fully cooked through. Add to veggies and stir to mix.
  7. In a separate bowl, whisk the eggs, milk, thyme, salt, pepper, and cheese.
  8. Pour egg mixture over veggie and sausage mixture. Stir until evenly dispersed.
  9. Bake for 40-45 minutes, or until center is firm. If it starts to brown halfway through, cover with foil.
  10. Let cool 15 minutes before serving.
