Tahini Freezer Fudge is its own love language. Gluten-free, dairy-free, and deliciously vegan, it's sweetened with dates and maple syrup and is ready in 30 minutes or less.

Ingredients
  

  • 2 cups dates
  • 1 cup tahini
  • 1 cup almond flour
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • sea salt for sprinkling

Method
 

  1. I personally like to soak my dates ahead of time so that they are really soft when going into the food processor, but you don't have to. If you choose to do so, soak them in a bowl of hot water for at least 15 minutes.
  2. Add soaked dates to a food processor and blend alone.
  3. Once smooth, add in the tahini, almond flour, maple syrup, and vanilla.
  4. Blend it up until well combined and smooth, there should not be any big chunks of dates.
  5. Press flat into an 8x8 pan or a bread pan for thicker fudge.
  6. Place in freezer for at least one hour before cutting. Sprinkle with sea salt before enjoying.
