Ingredients
  

Salad
  • 5 cups watermelon diced into 1 inch cubes
  • 1 5 oz bag arugula
  • 6 oz feta cheese diced or crumbled
  • 1/2 cup chopped mint leaves
  • 1/2 red onion sliced thin
  • 1/2 cup sunflower seeds
Vinaigrette
  • 1/3 cup olive oil
  • 1 lemon juiced
  • 1/4 cup red wine vinegar
  • 1 shallot chopped small
  • 2 tbsp honey
  • 1 tsp salt
  • 1/2 tsp pepper

Method
 

  1. Prepare all salad ingredients by chopping. Add them to a bowl.
  2. In another bowl, whisk together all vinaigrette ingredients.
  3. Drizzle vinaigrette over top of salad and lightly toss.
  4. Serve immediately.
