Chocolate Covered Strawberry Overnight Oats

Chocolate Covered Strawberry Overnight Oats are creamy, easy to make, and perfect for a healthy make-ahead breakfast. Made with rolled oats, Greek yogurt, chia seeds, fresh strawberries, and maple syrup, this overnight oats recipe is naturally sweetened, filling, and ideal for busy mornings.

Ingredients

  • 1 cup rolled oats
  • 2 tbsp chia seeds
  • pinch of salt
  • 1 cup diced strawberries
  • 1/2 cup plain greek yogurt
  • 2 tbsp maple syrup
  • 1 cup milk
  • 1/4 cup mini chocolate chips

Topping: diced strawberries + melted chocolate drizzle + flakey sea salt.

Instructions

  1. In a bowl, combine oats, chia seeds, and salt.
  2. Mash strawberries with potato masher or fork until macerated. Add strawberries and strawberry juice to oats.
  3. Stir in yogurt, maple syrup, and milk until all combined. Then mix in the mini chocolate chips.
  4. Divide into two mason jars. Refrigerate at least 4 hours or overnight. This will make 2 large servings or 4 small servings.
  5. When ready to eat, top with diced strawberries and either more mini chocolate chips or a melted chocolate drizzle and flakey sea salt.
  6. Enjoy!
