Flourless Almond Butter Cookies

Ingredients

  • 1 cup almond butter, unsalted – the thicker, the better! (any other thick nut butter would work here too)
  • 3/4 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt (only if almond butter is unsalted)
  • 1/2 cup chocolate chips
  • 1/2 cup chopped almonds
  • Sea salt for sprinkling

Instructions

  1. Preheat oven to 350F
  2. In a large bowl, mix together almond butter and coconut sugar.
  3. Add in egg and mix.
  4. Mix in vanilla, baking soda, and salt.
  5. Add chocolate chips and almonds and stir till combined.
  6. Let chill in fridge for at least 15 minutes.
  7. Place in 2 Tbsp balls on parchment lined baking sheets, and only press down slightly.
  8. Sprinkle with sea salt
  9. Bake for 12 -14 minutes. They will look soft but will set as they cool.
  10. Let cool completely before eating.
