Oatmeal Raisin Chocolate Chip Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/3 cup white sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup flour
  • 1.5 cups rolled oats
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 3/4 cup raisins

Instructions

  1. In a large bowl, use a hand mixer or stand mixer to beat butter and sugars until well combined. Beat in egg and vanilla until fluffy. Set aside.
  2. In a medium bowl, mix together flour, oats, baking soda, cinnamon, and salt.
  3. Slowly add dry ingredients to wet ingredients mixing until all combined.
  4. Stir in chocolate chips and raisins until well incorporated.
  5. Let batter chill for 30 minutes in fridge.
  6. Preheat oven to 350F and line baking sheet with parchment paper.
  7. Roll cookie dough into balls, then flatten slightly by pressing on top of each cooke dough round, making 24 cookies.
  8. Bake for 10-12 minutes or until slightly golden. Sprinkle with sea salt and enjoy!
