First, grab a large mixing bowl and use a hand mixer or stand mixer to beat the butter and sugars until they are well combined. Beat in the egg and vanilla until the mixture becomes fluffy. Set aside.
Next, in a medium bowl, combine the flour, oats, baking soda, cinnamon, and salt.
Slowly add the dry ingredients to the wet ingredients, mixing until everything is combined.
Then, stir in the chocolate chips and raisins until well incorporated.
Let the batter chill for 30 minutes in fridge.
Preheat oven to 350ยฐF and line a baking sheet with parchment paper.
Once the cookie dough is chilled, use a cookie scoop or spoon and roll it into 24 balls, placing them on the baking sheet as you go. Flatten slightly by pressing on top of each cookie dough round.
Bake for 10-12 minutes or until slightly golden. Sprinkle with sea salt and enjoy!
Feel free to store these at room temperature or in the fridge or freezer for enjoying later on.
Substitution Tip
Missing an ingredient or two? Here are some item swaps that may be helpful in preparing this oatmeal cookies recipe.
Egg
If you’re out of eggs or would prefer to skip it, try using apple sauce! Add 1/4 cup of applesauce to the recipe in place of the egg, and that should do the trick. You can also make a flax seed egg. To do so, combine 1 tbsp of ground flax with 2.5 tbsp of water. Then, use in place of the egg!
Baking soda
Out of baking soda? You can replace it with baking powder! To do so in this recipe, you’d need to use 1.5 tsp of baking powder
Chocolate chips
Feel free to swap the chocolate chips with any preferred chip flavor, whether white chocolate, peanut butter, or even butterscotch!
Raisins
Not a fan of raisins? Skip them or replace them with something similar, like craisins. That would be so tasty!
Recipe Tips
What is the secret to moist cookies?
Brown sugar! White sugar-heavy recipes create harder, crunchier cookies, whereas brown sugar softens them up. Using a combination of the two is the best option!
Why are my oatmeal raisin cookies so hard?
Your ratios may have been off! Be sure to follow the measurements closely to achieve the optimal cookie texture.
What makes cookies chewy instead of crispy?
Every ingredient used to make cookies contributes to the final texture and whether they turn out chewy or crispy. These particular cookies are crispy on the outside and chewy on the inside thanks to the ratio of brown sugar, white sugar, and flour that we used.
What can I add to these cookies?
For extra flavor, you could add any sort of crushed nut (peanuts, pecans, walnuts), flaky coconut, craisins, white chocolate chips, crushed pretzels… the list goes on!
