- Drizzle on olive oil, then add all spices. Toss to fully coat.
- Bake for 20 minutes, flipping halfway through.
- Remove potato mixture from oven and dollop sausage on top, all throughout the top in bite-sized chunks. Bake for 15 minutes.
- Remove from oven and crack 8-9 eggs on top wherever there is some space. Place back in oven for 8-12 minutes depending on how cooked you would like your egg yolk. I did 10 minutes for a slightly runny egg.
