This Sheet Pan Breakfast Hash with Sausage is an easy one-pan breakfast made with crispy breakfast potatoes, colorful peppers, savory pork sausage, and perfectly baked eggs. It's ideal for weekend brunch, meal prep, or feeding a crowd with minimal cleanup.

Ingredients
  

  • 1/2 red onion diced
  • 1 red pepper diced
  • 1 yellow pepper diced
  • 36 oz frozen breakfast potatoes
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 lb pork breakfast sausage in casing
  • 8-9 eggs
  • parsley for topping

Method
 

  1. Preheat oven to 425F.
  2. To a large sheet pan, add diced onion, peppers, and potatoes.
  3. Drizzle on olive oil, then add all spices. Toss to fully coat.
  4. Bake for 20 minutes, flipping halfway through.
  5. Remove potato mixture from oven and dollop sausage on top, all throughout the top in bite-sized chunks. Bake for 15 minutes.
  6. Remove from oven and crack 8-9 eggs on top wherever there is some space. Place back in oven for 8-12 minutes depending on how cooked you would like your egg yolk. I did 10 minutes for a slightly runny egg.
  7. Sprinkle with parsley and serve!
