Another delicious recipe from Erin! I prepped and made it all a day ahead. Went in the fridge over night and into the oven in the morning for a bible study class pot luck breakfast. I don’t know how she does it, every recipe of her‘s is yummy, savory or sweet!

Really yummy! We had a little leftover ham from the holidays, so I might have used a little less ham than called for. Either way, it turned out great! I also added a little red pepper to ours. It freezes well – makes a lot – I just cut it into squares and can pull them out for an easy breakfast.
