Enjoy a hearty and delicious morning meal with this Sausage French Toast Casserole. It’s everything you love about french toast, but with added protein and flavor!
The most delicious french toast dish
When it comes to breakfast, anything with french toast in the title gets an automatic yes from me. It’s one of my favorite dishes. French toast bread is always so sweet and soft, and it almost feels like you’re getting to enjoy dessert for breakfast!
Today, I’m showing you how to make french toast with a twist. We’ll be adding sausage to create a delicious sausage french toast casserole made with challah bread, pecans, cinnamon, and more. This is a wonderful option for preparing when you have guests. The dish provides 8 satisfying servings, and guests are sure to go crazy over it!
Ingredients in sausage french toast casserole
This recipe includes just what you’d expec. Eggs, milk, butter, and powdered sugar… all of the fixings of traditional french toast. But, we’re adding in some sausage and a few other ingredients that give french toast a new meaning!
- Challah: First up, you will need 1 lb of bread. I recommend using a loaf of challah bread for the best flavor and texture! Before using, dice it into big cubes.
- Sausage links: Next up is the sausage. You will need 1 package, cooked and diced.
- Pecans: Add sweet and nutty flavor with 3/4 cup of diced pecans.
- Eggs: As far as eggs go, you will need 6.
- Milk: Follow the eggs with 2 cups of milk. I recommend using dairy or an unflavored nut alternative.
- Cinnamon: Add some cozy flavor with the addition of 2 tsp of cinnamon.
- Vanilla: Then, follow that with 2 tsp of vanilla.
- Salt: 1/4 tsp of salt makes a tremendous difference.
- Butter: 1 stick (1/2 cup) of butter serves as the base of the topping layer.
- Coconut sugar: The butter will be sweetened up with the addition of 1 cup of coconut sugar.
- Powdered sugar: Last but not least, set aside some powdered sugar to use as a topping when the dish is complete!
Kitchen tools needed to make french toast and sausage casserole
If there’s one thing you need to know about me, it’s that I like to be organized. One way I stay organized is by gathering all of the kitchen tools I’ll need prior to cooking! It makes the whole process seem much simpler and more streamlined. Below is a list of everything you will need.
- 9×13 casserole dish
- Cutting board
- Chopping knife
- Large mixing bowl
- Medium mixing bowl
- Whisk
- Stirring utensil
- Small microwavable bowl
To measure ingredients, you will need the following sized cups: 1/4 tsp, 1 tsp, 3/4 cup, and 1 cup.
How to make a french toast bake with sausage
Once you’ve gathered your ingredients and tools, it’s finally time to start creating this french toast casserole with sausage! The dish should be ready to enjoy within about 1 hour and 20 minutes. That includes the baking and cooling time.
To begin, heat the oven to 375ยฐF and grease a 9×13 casserole dish.
Then, add the diced challah to a large bowl, followed by the chopped sausage and pecans.
In a separate bowl, whisk together the eggs, milk, cinnamon, vanilla, and salt.
Pour the egg mixture over the challah mixture and stir until the challah is evenly coated. Do not over-mix, as you don’t want it to become soggy.
Once combined, pour the mixture into the greased casserole dish.
Then, place the butter in a small bowl and melt it in the microwave. Once melted, whisk in the coconut sugar. Pour the mixture over the challah in the casserole dish.
Bake for 40-45 minutes, or until the dish is brown and crispy on top.
Let cool for 10 minutes before serving.
What to serve with this dish
Wondering what to pair with your casserole? Here are some ideas!
- Bacon: Why not make this meal even more satisfying with some thick sliced applewood smoked bacon?!
- Fresh fruit: This is always a great option. I recommend berries, cantaloupe, or pineapple!
- Eggs: Eggs always complete a breakfast dish. Serve ’em up scrambled, fried, or however you like them!
Storing leftovers
One of the great things about this dish is that it can be both refrigerated or frozen for enjoying later. If you have a small amount of leftovers you plan to enjoy in the next couple of days, I recommend sticking them in the refrigerator! Simply transfer to an airtight container and refrigerate for about 3 days.
However, if you plan to enjoy this meal at a later date, freezing is the way to go. Cover the casserole dish in foil or plastic wrap, or transfer to a freezer bag and freeze for up to 1 month.

Hi Erin! This recipe sounds amazing! If I want to make this ahead of time for a brunch potluck, would you recommend mixing the dry ingredients separate from the wet ingredients and combining right before baking? Or should I pre bake and then just reheat when ready to eat? Thanks in advance!!
Erin says
Hi Nancy, thank you and you can actually combine it all so that it sits and soaks – then bake it right before you are ready! Bring the dish to room temp first, though, just so the baking dish doesn’t shatter!
Nancy says
Thank you so much! I made this as a test run for friends and everyone was obsessed!!! I left out the nuts because of an allergy and it was truly perfection! I will definitely be making this again and love that I can prep ahead of time next time. Thank you!!!
