Ingredients
- 3 lbs carrots, peeled and sliced on a diagonal
- 1/4 cup olive oil
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/2 tsp pepper
- 1 tbsp honey + 1 tbsp olive oil for tossing.
Instructions
- Preheat oven to 425F and line baking sheet with parchment paper.
- In a large bowl, add carrots, olive oil, honey, garlic, parsley, salt, and pepper. Toss to coat and then pour onto baking sheet.
- Bake for 30 minutes, stirring every 10 minutes.
- Add 1 tbsp honey and 1 tbsp olive oil, toss, and bake for another 8-10 minutes.
- Top with fresh parsley. Serve.
