Ingredients
- 6 cups cornflakes, crushed
- 1 cup natural peanut butter
- 1 cup honey
- 1/4 cup coconut oil, measured solid
- 1 tsp vanilla
- 1/4 tsp salt if peanut butter isn’t salted
Chocolate topping:
- 1.5 cups chocolate chips
- 2 tbsp peanut butter
- 2 tbsp coconut oil, measured solid
Instructions
- Add crushed cornflakes to a large bowl.
- In a saucepan over medium heat, add peanut butter, honey, and coconut oil. Mix together and let warm thoroughly, about 3 minutes. Turn off heat and add in vanilla.
- Pour peanut butter mixture over crushed cornflakes and mix until well combined.
- Pour into greased 8×8 dish.
- In a bowl, add chocolate chips, peanut butter, and coconut oil. Microwave in 30 seconds increments until all melted.
- Pour over the top of the cornflake mixture and spread evenly.
- Freeze for at least 1 hour or refrigerate for 4 hours. Keep stored in fridge or freezer.
