Peanut Butter Cornflake Bars

Ingredients

  • 6 cups cornflakes, crushed
  • 1 cup natural peanut butter
  • 1 cup honey
  • 1/4 cup coconut oil, measured solid
  • 1 tsp vanilla
  • 1/4 tsp salt if peanut butter isn’t salted

Instructions

  1. Add crushed cornflakes to a large bowl.
  2. In a saucepan over medium heat, add peanut butter, honey, and coconut oil. Mix together and let warm thoroughly, about 3 minutes. Turn off heat and add in vanilla.
  3. Pour peanut butter mixture over crushed cornflakes and mix until well combined.
  4. Pour into greased 8×8 dish.
  5. In a bowl, add chocolate chips, peanut butter, and coconut oil. Microwave in 30 seconds increments until all melted.
  6. Pour over the top of the cornflake mixture and spread evenly.
  7. Freeze for at least 1 hour or refrigerate for 4 hours. Keep stored in fridge or freezer.
