Experience the perfect combination of crispy cornflakes and creamy peanut butter in every bite. The addition of honey adds a delightful sweetness, while the homemade chocolate topping gives it a perfect chocolatey finish.

Ingredients Needed

Making these healthy cornflake bars with chocolate requires a few simple ingredients.

Here’s a bit more about what I used:

  • Cornflakes: The base of this sweet snack. I used plain cornflakes, but you can also use the sweeter varieties. To keep this recipe gluten-free, use gluten-free cornflake cereal. You’ll need 6 cups.
  • Natural Peanut Butter: I used creamy natural peanut butter that contained just peanuts and salt. Be sure to use a peanut butter that is not too dry or oily. Add 1 cup to the cornflakes and 2 tablespoons to the chocolate topping.
  • Honey: Adds sweetness and binds the ingredients together so the bars stay in shape after baking. You can also use maple syrup or any other sweetener of your choice.
  • Coconut Oil: This ingredient adds a bit of moisture to the bars and helps bind them together. Make sure to measure it out solid! You’ll also need some to melt the chocolate chips for the chocolate topping.
  • Vanilla: I used a teaspoon of pure vanilla extract, but you could also use a dash of almond extract for added flavor.
  • Salt: This is optional but a great option if you plan to use salt-free peanut butter.
  • Chocolate Chips: I used dark chocolate chips to make the topping. You can also use chopped dark or milk chocolate and melt it over a double boiler or in the microwave. You’ll need 1.5 cups!

Kitchen Tools Required

Here’s a bit more information about what I used to make these peanut butter cornflake bars.

  • Large bowl
  • Saucepan
  • Spatula
  • 8×8 baking pan
  • Medium bowl
  • Microwave

For measuring, you will need 1/4 cup, 1 cup, a tablespoon, 1/4 teaspoon, and 1 teaspoon.

How To Make Peanut Butter Cornflake Bars

Get ready for a delicious treat! Start by adding crushed cornflakes to a big bowl.

In a saucepan set to medium heat, combine peanut butter, honey, and coconut oil. Stir everything together and let it warm up for about 3 minutes. Turn off the heat and mix in some vanilla for extra flavor.

Now, pour the peanut butter mixture over the crushed cornflakes and give it a good stir until everything is well mixed.

Take a greased 8×8 dish and pour the mixture into it.

In another bowl, combine chocolate chips, peanut butter, and coconut oil. Pop it in the microwave for 30 seconds at a time until everything is melted and smooth.

Pour the melted chocolate mixture over the top of the cornflake mixture and spread it out evenly.

Now comes the hard part – waiting!

Pop the dish in the freezer for at least 1 hour or refrigerate it for 4 hours. Once it’s set, you can keep it in the fridge or freezer for whenever you need a sweet treat fix.

Can I omit the chocolate?

Absolutely! When you’re done mixing together the cornflake and peanut butter mixture, just pop it in an 8×8 dish and let it set.

How can I make these peanut butter cornflake bars vegan?

To make this recipe vegan, simply substitute the honey with maple syrup or agave nectar and use a vegan-friendly chocolate chip like Enjoy Life.

What other ingredients can I use?

You can add some chopped nuts for extra crunch or dried fruit for a bit of sweetness. Some great additions include chopped nuts, shredded coconut, dried fruit, mini marshmallows, and even some crunchy cereal for extra texture!

Don’t forget that you can use any kind of cornflake cereal to make this recipe gluten-free.

Storing leftovers

These peanut butter cornflake bars keep well for up to a week if stored in an airtight container. Make sure to pack them with wax paper between each layer so the chocolate doesn’t stick! They can also be frozen for up to 3 months.

For an extra special treat, reheat them in the oven or in a toaster. They’ll be just as delicious as when they were first made!

Ingredients

Chocolate topping:

  • 1.5 cups chocolate chips
  • 2 tbsp peanut butter
  • 2 tbsp coconut oil, measured solid

Instructions

  1. Add crushed cornflakes to a large bowl.
  2. In a saucepan over medium heat, add peanut butter, honey, and coconut oil. Mix together and let warm thoroughly, about 3 minutes. Turn off heat and add in vanilla.
  3. Pour peanut butter mixture over crushed cornflakes and mix until well combined.
  4. Pour into greased 8×8 dish.
  5. In a bowl, add chocolate chips, peanut butter, and coconut oil. Microwave in 30 seconds increments until all melted.
  6. Pour over the top of the cornflake mixture and spread evenly.
  7. Freeze for at least 1 hour or refrigerate for 4 hours. Keep stored in fridge or freezer.
