Easy and delicious banana bread with peanut butter
Do you know what’s better than banana bread? I’ll tell you. Salted peanut butter banana bread, that’s what! And today, I’m showing you how to make it with this easy 7-step recipe that includes a delicious peanut butter and powdered sugar glaze.
And if that didn’t convince you, the ingredients might. Read on to learn how we’re skipping the granulated sugar and traditional all-purpose flour in favor of healthier ingredients that sneak in added nutrients and protein!
Ingredients in this peanut butter and banana bread
Peanut butter banana bread is made with two sets of ingredients: those for the batter, and those for the glaze. To make the batter, you will need standard items like eggs, bananas, flour, and sugar. The glaze uses only 3 ingredients! We’ll finish off the bread with a flake salt sprinkling that completely upgrades the flavor.
Batter:
- Bananas: First up for the batter? Bananas, of course! You will need 3 large ripe bananas for this recipe. For best results, the skins should be pretty brown.
- Eggs: 2 eggs will be used to help achieve the correct texture.
- Peanut butter: 1/2 cup of natural peanut butter is going to thicken up the batter and provide an absolutely delicious flavor.
- Coconut oil: 1/2 cup of melted coconut oil is up next! Use a refined version to ensure that your bread doesn’t have any coconut flavor.
- Vanilla: Every baked treat needs vanilla! Use 1 tsp.
- Oat flour: Next up is the oat flour. About 1 3/4 cup should do the trick. Keep the measurements accurate for the best bread texture.
- Baking powder: To help the bread bake properly, use 1 tsp of baking powder.
- Coconut sugar: Then, add some sweet flavor with 1/2 cup of coconut sugar!
- Salt: Finally, finish off the batter with 1/2 tsp of salt.
Glaze:
- Powdered sugar: The glaze is made with a base consisting of 1 cup of powdered sugar.
- Peanut butter: Then, 1/4 cup of natural peanut butter thickens it up and creates a yummy flavor!
- Milk: Add milk until the glaze reaches the desired consistency. You will likely just need a splash or two.
- Flake salt: Sprinkle some flake salt on top of the bread to complete the salted peanut butter flavor.
Kitchen tools you’ll need to make this recipe
To make this salted peanut butter banana bread, you will need about 5 kitchen tools in addition to a variety of measuring cup sizes.
- 9×4 inch loaf pan
- Large mixing bowl
- Potato masher or fork
- Whisk
- Medium bowl

How to make salted peanut butter banana bread
Salted peanut butter banana bread comes together in just under an hour including baking time.
To begin, preheat the oven to 350ยฐF and grease a 9×4 inch loaf pan.
Then, in a large mixing bowl, mash the bananas until smooth. A potato masher works really well here, but you can also use a fork! Once smooth, whisk in the eggs, peanut butter, oil, and vanilla. Mix until well combined.
Then, use a medium sized bowl to combine the oat flour, baking powder, coconut sugar, and salt.
Add the dry ingredients to the wet, and mix until just combined.
Pour the batter into the greased baking dish and bake for 45-50 minutes or until a toothpick inserted into the center of the loaf comes out clean. Once cooked, remove from the oven and let cool completely.
While the bread cools, prepare the glaze by whisking together the powdered sugar, peanut butter, and milk.
Drizzle the glaze over the cooled loaf and sprinkle with flake salt.
How this recipe is healthier
As with all of my recipes (especially baked goods!), I snuck ingredients into this bread that are as healthy as possible. These items were used in place of traditional baking ingredients and work to add extra nutrients to the bread!
Peanut Butter
First, I used natural peanut butter. I am a huge advocate for always using natural versions because it tastes delicious and avoids unnecessary added chemicals! You can also use natural almond or cashew butter.
Coconut oil
Next, coconut oil was used in place of vegetable or canola oil. It’s a much cleaner alternative and doesn’t create a coconut flavor (unless using unrefined coconut oil).
Oat flour
I skipped the regular all-purpose flour in favor of oat flour, a version with a bit of added protein and extra nutrients too!
Coconut sugar
Last but not least, coconut sugar is one of the easiest ingredients to use in baked goods because it substitutes granulated sugar at a 1:1 ratio. It tastes great too! You’ll love it in this peanut butter banana bread.
Storing leftovers
Storing banana bread couldn’t be easier, because all you have to do is cover it and leave it on the counter! You can place it in the refrigerator if you wish, but it may cause the bread to dry out a bit. For best results, I recommend placing it in an airtight container and just leaving it on the counter at room temperature! Enjoy within about 3-4 days.
