Ingredients
Meatballs
- 1lb ground turkey (93/7 blend)
- 1 egg
- 1/2 cup breadcrumb (or almond flour)
- 2 clove minced garlic
- 2 green onions, chopped
- 2 tbsp reduced sodium soy sauce
- 1 tbsp rice wine vinegar
- 2 tsp sesame oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup chopped cilantro
Sauce
- 1/2 cup reduced sodium soy sauce
- 1/4 cup honey
- 2 tbsp rice wine vinegar
- 2 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp chili oil
Instructions
- In a large bowl, add all of the meatball ingredients. Mix together until well combined.
- Roll into 20 meatballs. Heat a large skillet over medium heat with 2 tbsp olive oil. Once hot, add meatballs and cook for 7-8 minutes, turning every constantly to ensure even cooking on all sides. Once meatballs reach 165F they are done.
- Meanwhile, add all sauce ingredients to a small saucepan. Bring to a low simmer and turn off heat.
- Once meatballs are cooked, turn heat off and pour in sauce to cover meatballs, tossing to coat. Serve meatballs over rice and with veggies.
