key ingredients
– Almond flour – Cinnamon – Coconut oil – Maple syrup – Pistachios
Mix almond flour, baking soda, cinnamon, and salt in one bowl. In another bowl, whisk eggs, coconut oil, maple syrup, vanilla, and almond extract.
Combine wet and dry ingredients, then stir in chopped pistachios. Pour batter into the pan.
Mix crumb topping ingredients and sprinkle over the batter.
Bake for 45-55 minutes until a toothpick comes out clean. Cool for 30 minutes before serving.
Optionally, sprinkle with powdered sugar.
