The perfect cake for coffee pairing

Coffee cake is called coffee cake for a reason — it pairs splendidly with everyone’s favorite morning beverage (looking at you, coffee!). From the fluffy cake bases to the delicious crumbly toppings, coffee cakes take the cake (pun intended) for the best morning treat. This healthy pistachio coffee cake number is no different!

Made with healthier ingredients, healthy pistachio coffee cake is great for enjoying in the morning paired with your cup of joe, or in the afternoon as a snack! It’s sweet enough that it also makes a fabulous post-dinner dessert.

Ingredients in this healthy pistachio coffee cake

The coffee cake ingredients used in this recipe are split into two parts: those for the coffee cake base and those for the topping.

The cake mix utilizes healthier baking ingredients like almond flour, maple syrup, and coconut oil, as well as flavorings like salt, cinnamon, and vanilla and almond extract. Finally, the crumb topping is made of an almond flour and coconut sugar base and uses chopped pistachios to tie everything together!

Cake

  • Almond flour: First up is 2 and 1/4 cups of almond flour. Using almond flour in this recipe gives the cake a nice, fluffy texture.
  • Baking soda: 1 tsp of baking soda helps the cake cook and rise properly.
  • Cinnamon: Next, 2 tsp of cinnamon adds a good amount of flavor to the dish.
  • Salt: Salt is a must! Use 1/4 tsp of salt for the best flavor.
  • Eggs: Next, 3 large eggs help all of the dry ingredients bind together properly. They should reach room temperature before adding to the batter.
  • Coconut oil: Coconut oil serves as the oil in this cake. Use 1/3 cup, melted.
  • Maple syrup: Add deliciously sweet flavor with 1/2 cup of maple syrup.
  • Extracts: Then, follow the maple syrup with 1 tsp of vanilla extract and 1 tsp of almond extract.
  • Pistachios: Last but not least, 3/4 cup of chopped pistachios round out the cake portion of this recipe.

Crumb topping

  • Almond flour: The crumb topping utilizes almond flour as well. For this part of the recipe, use 1 cup.
  • Pistachios: Then, chop up 3/4 cup of pistachios.
  • Coconut sugar: Make things a bit sweeter by using 1/2 cup of coconut sugar. If preferred, white sugar is fine.
  • Coconut oil: Next, 1/3 cup of melted coconut oil will help the crumble form.
  • Cinnamon: Finish off the topping mixture with 1 tsp of cinnamon added for flavor.

Tools used to make this pistachio coffee cake recipe

When it comes to preparing this coffee cake, you’ll need about 6 main kitchen tools along with a set of measuring cups. Everything is listed below:

  • 8×8 pan or 8 inch round pan
  • Parchment paper
  • Nonstick spray
  • Medium mixing bowl
  • Stirring utensil
  • Small mixing bowl

To measure ingredients, you will need the following sized measuring cups: 1/4 tsp, 1 tsp, 1/4 cup, 1/3 cup, 1/2 cup, 3/4 cup, and 1 cup.

How to make this pistachio coffee cake with a crumb topping

Ready to get started? Pistachio coffee cake requires around 15 minutes of prep time and just under an hour of baking time.

First, preheat the oven to 350°F and line an 8×8 pan or 8-inch round cake pan with parchment paper or nonstick spray.

Then, grab a medium sized bowl and mix together the almond flour, baking soda, cinnamon, and salt.

In a larger bowl, whisk together the eggs, coconut oil, maple syrup, vanilla and almond extract.

Add the dry ingredients to the wet and stir to combine. Then, stir in the chopped pistachios.

Pour everything into a baking dish.

Next, in a small bowl, mix together the crumb topping ingredients until completely combined. Sprinkle the mixture over the top of the cake batter until evenly dispersed.

Bake in the oven for 45-55 minutes or until a toothpick inserted in certain areas comes out clean.

Let cool for at least 30 minutes before serving.

Optionally sprinkle with powdered sugar, and enjoy!

    What is the difference between coffee cake and regular cake?

    One of the main things that separates regular cake from coffee cake is the icing, or lack thereof. Traditional cakes use icing toppings, while coffee cakes tend to feature crumbles!

    Why do they call coffee cake coffee cake?

    Coffee cake earned its name not because it’s made with coffee, but because it tastes so great when enjoyed alongside coffee! Coffee cake has a bread texture and typically comes with a slightly sweeter flavor.

    How can you tell when a cake is done?

    A cake is done when a toothpick inserted comes out clean. I like to test a toothpick in a few different spots to be sure.

    Why is my coffee cake raw in the middle?

    If the cake winds up raw in the middle, it may be undercooked. Try sticking it back in the oven for a few more minutes. If that doesn’t do the trick, the ingredient amounts may have been slightly off.

    Storing leftovers

    This pistachio coffee cake should be stored in an airtight container. It can be kept on the counter at room temperature for 24 hours or longer in fridge.

    How this coffee cake is healthier

    This coffee cake uses a number of ingredient swaps to pack in vitamins and minerals and make the cake that much more nutritious. You’ll see all purpose flour omitted in favor of almond flour, coconut oil used to replace vegetable oil, canola oil, or butter, and maple syrup used to replace white or brown sugar!

    Together, these ingredient replacements add extra protein, fiber, potassium, magnesium, and more to the cake recipe.

      Can baking powder be subbed for baking soda? And can regular flour be subbed for almond flour?
