Ingredients
– Carrot – Celery – Onion – Avocado oil – Garlic – Chicken stock – Lemons – Orzo – Chicken breasts – Spinach
Prepare veggies as needed, then heat avocado oil in a large Dutch oven or saucepan. Add onions, carrots, and celery, cooking for 5 minutes until beginning to soften, then add garlic, salt, pepper, and thyme, cooking for another 3 minutes.
Pour in chicken broth and juice of three lemons, cover with a lid, and bring to a boil. Once boiling, add orzo and cooked chicken, simmering for 15-20 minutes on medium heat, stirring occasionally.
Turn off heat and add spinach; the soup will thicken as it sits. Serve and enjoy!
