Ingredients
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 1/4 tsp peppermint extract
- 1 3/4 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup white chocolate chips – sometimes I do a little more
- 3/4 cup broken candy cane pieces
Instructions
- In a large mixing bowl, using a hand mixer or stand mixer, beat together butter and sugar until creamy. Once creamy, add in egg, vanilla, and peppermint. Beat until smooth.
- In a medium sized bowl, whisk together flour, baking soda, baking powder, and salt.
- Slowly add dry ingredients to wet ingredients until all combined and dough forms.
- Stir in chocolate chips and candy cane pieces. Scoop dough into balls and place on parchment lined baking sheet.
- Bake at 350 for 11-13 minutes or until cooked through. Let cool on rack for longer. Sprinkle with leftover candy cane pieces.
