Ingredients
  

  • 1 cup + 2 tbsp oat flour
  • 1/2 cup nut butter I prefer salted peanut butter or cashew butter.
  • 3 Tbsp honey
  • 1 Tbsp coconut oil melted add more if needed
  • 1 tsp vanilla
  • 1 Pinch of salt if none in nut butter
  • 1/2 cup chocolate chips I used mini

Method
 

  1. Mix together all ingredients in a bowl until well combined.
  2. If too wet to roll into balls, chill in fridge for 30 minutes.
  3. Roll into balls and store in fridge or freezer. If freezer, defrost for a few minutes before eating.

  • Don't skip the vanilla extract — it makes all the difference! This is one of those ingredients that can easily get overlooked, but it's essential for that classic cookie dough flavor. It's in there for a reason!
  • If the dough is too wet to roll, just pop it in the fridge for 30 minutes. The mixture will firm right up and be much easier to roll into balls. No need to add more flour or panic — just be patient!
  • Use salted peanut butter or cashew butter for the best flavor. The salt in the nut butter balances out the sweetness perfectly. If your nut butter doesn't have salt, just add a pinch to the batter.
