These healthy cookie dough bars capture all the flavor of classic chocolate chip cookie dough in a no-bake dessert that's easy to make and safe to eat. Made with wholesome ingredients like oat flour, nut butter, maple syrup, and chocolate chips, they have a soft, chewy texture and rich cookie dough flavor without requiring any baking.

Ingredients
  

For cookie dough layer:
  • 1 cup cashew butter
  • 1/4 cup maple syrup
  • 3/4 cup oat flour or 1 cup almond flour
  • 3/4 cup mini chocolate chips
  • pinch of salt
Chocolate layer:
  • 1 cup chocolate chips
  • 1/2 cup cashew butter
  • sea salt

Method
 

  1. In a large bowl, mix together cashew butter, maple syrup, and oat flour.
  2. Add in chocolate chips and salt.
  3. Press down into 8x8 pan, I lined mine with parchment paper.
  4. For chocolate layer, in a microwaveable bowl, melt chocolate chips and cashew butter in 30 second increments until fully melted.
  5. Pour on top of cookie dough layer. 
  6. Place in freezer for one hour, sprinkle sea salt on top, and then cut into bars.
  7. Store in fridge or freezer.
