Ingredients
  

  • 3 lbs carrots peeled and sliced on a diagonal
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tbsp honey + 1 tbsp olive oil for tossing.

Method
 

  1. Preheat oven to 425F and line baking sheet with parchment paper.
  2. In a large bowl, add carrots, olive oil, honey, garlic, parsley, salt, and pepper. Toss to coat and then pour onto baking sheet.
  3. Bake for 30 minutes, stirring every 10 minutes.
  4. Add 1 tbsp honey and 1 tbsp olive oil, toss, and bake for another 8-10 minutes.
  5. Top with fresh parsley. Serve.
