Delicious and easy one pan lemon feta chicken

When it comes to preparing dinner, easy is always preferred. After all, most people don’t want to spend two hours in the kitchen after a long day of work! When you need a meal that’s simple, easy, and one pan, this sheet pan lemon feta chicken is the way to go.

Made with chicken thighs flavored with lemon, garlic, spices, and herbs, the dish features the juiciest, yummiest chicken paired with potatoes and green beans. It’s a complete nutritious meal that leaves the belly feeling nice and full! Furthermore, at six servings, it feeds a family and can be easily doubled for more servings.

This recipe begins with delicious, juicy chicken flavored with garlic, oregano, dill, and lemon. It’s paired with potatoes and green beans for a complete and filling meal!

Chicken

  • Chicken thighs: This recipe begins with 2 lbs of boneless, skinless chicken thighs.
  • Olive oil: 2 tbsp of olive oil is used to cook the chicken.
  • Lemon zest: Next, add flavor with the zest of 1 lemon.
  • Lemon juice: Then, use the juice (1 lemon’s worth).
  • Garlic: Add more flavor by including 3 cloves of minced garlic.
  • Spices and herbs: Then, throw in 1/2 tsp of salt, 1/2 tsp of black pepper, 1/2 tsp of oregano, and 1/2 cup of fresh dill.
  • Feta: The chicken portion of the recipe is made complete with 2/3 cup of crumbled feta cheese.

Potatoes

  • Potatoes: Next, add starch to the recipe with 2 lb of yukon gold potatoes.
  • Olive oil: 2 tbsp of olive oil is used to coat the potatoes before adding the spices.
  • Spices: Add flavor with the use of 1/2 tsp of salt, 1/2 tsp of pepper, and 1/2 tsp of oregano.

Green Beans

  • Green beans: Next, the greens! Use 1 lb of green beans.
  • Olive oil: Just like with the potatoes, 2 tbsp of olive oil is used to coat the green beans prior to cooking.
  • Spices: Add flavor with 1/2 tsp of salt, 1/2 tsp of pepper, and 1/2 tsp of oregano.

Tools used to make lemon chicken with feta

Ready to dive into this recipe? Before you get started, gather the following kitchen tools so that everything is ready to go and within an arm’s reach.

  • Cutting board and knife
  • Mixing bowl
  • Baking sheet
  • Parchment paper
  • Stirring utensil
  • Spatula

For measuring ingredients, you will need 1/2 tsp, 1 tbsp, and 2/3 cup sized measuring cups.

How to make this sheet pan lemon feta chicken recipe

Ready to get started? This recipe yields 6 servings and comes together in under an hour of total time (after marinating the chicken).

First trim the extra fat from the chicken thighs and place the thighs in a bowl. Add the olive oil, lemon juice, lemon zest, garlic, salt, pepper, and oregano. Mix until the chicken is well coated. Let it sit in the marinade for at least 30 minutes or up to 8 hours.

Once marinated, preheat the oven to 400°F and line a baking sheet with parchment paper.

Next, cut the potatoes into cubes. Add them to a bowl and toss with olive oil, salt, pepper, and oregano. Pour them onto the baking sheet and bake for 10 minutes.

While the potatoes bake, cut the green beans into bite sized pieces. Add them to the bowl the potatoes were in and then toss with olive oil, salt, pepper, and oregano.

Next, after the potatoes have cooked for 10 minutes, take them out of oven and add the green beans. Mix until evenly spread, then add the chicken thighs to pan, nestling them into the potatoes.

Then, bake for 18 minutes and then broil for 5-6 minutes or until everything starts to brown and get crispy.

Lastly, place the chicken, potatoes, and green beans on a platter and sprinkle with fresh dill, feta, and a little bit of salt and pepper. Squeeze fresh lemon juice on top. Enjoy!

Storing leftovers

Leftover feta chicken should be stored in the refrigerator and enjoyed within 2-3 days. The potatoes and green beans should also be stored in the fridge, and those can be enjoyed for 3-4 days. Place in air tight containers and store separately for best results.

How to make your chicken juicy?

One way to make chicken juicier is to let it soak in water for around 20 minutes prior to marinating. Avoid overcooking, as this can lead to dryness. Cook until the internal temperature reaches 165°F, and then remove from the heat.

This particular Greek chicken and feta recipe is made with chicken thighs, olive oil, lemon zest, lemon juice, garlic, salt, pepper, oregano, fresh dill, and feta cheese.

Is it better to pan fry or bake chicken?

Either method works. For this recipe, we’re baking it! It is a one pan recipe that allows all three parts of the meal to cook on the same pan in the oven.

Can I use chicken breasts instead?

You can! I would cut them in half prior to marinating so that they’re around the size of chicken thighs.

Ingredients

  • 2lbs boneless skinless chicken thighs
  • 2 tbsp olive oil
  • zest of 1 lemon

Instructions

    This was so good and was easy to make! I don’t usually go for recipes with dill so I was hesitant but it adds such a great flavor! Will add to the rotation.
